Blistered Sweet Potatoes
These are simple to make, healthy, and oh so good. Cut thin slice of the sweet potatoe longways (peel on) and place on cookie sheet. Spray lightly with 100% canola spray on both sides. Sprinkle with kosher salt and garlic powder. Bake on the bottom shelf in oven @ 400 until you smell a little char. The bottoms should be crisp and lightly blistered and the tops should be soft and gooy. (flip and bake longer if you want both sides crisp)
